Will piezo oven igniter ignite oxy-hydrogen?
or does hydrogen nee a higher temperature than a piezo spark?

It'll do it, I'm virtually certain. There have been studies to autopsy why hydrogen explosions occur in the seeming absence of an ignition source. I can't imagine ANY spark failing to set it off. There are few things less stable than a hydrogen/oxygen blend. Our planet is blanketed by the reaction product.

The slightest spark will do it.
