It is obviously the one that works best for the job you want to do.

1) Please post readable images. If need be, re-draw instead of using fuzzy copies from somewhere else.

2) What's best depends on what you want to do and other constraints. Describe what you want to do and give any relevant constraints, such as availability of components and cost.

Single DPDT Relay wins over the two SPDT relays.

Much lower component count means it will be cheaper and easier to build. It will also tend to be more reliable, with easier troubleshooting if there is a problem.

It should require less calibration because there are fewer parts that might be out of sync.
