I don't know but I'm guessing piezos of some kind are utilized in this application.

 

They use a variety of flex and force sensors and strain gauges to collect data at a number of points, Then the data is passed on to the software which makes the imaging. Similar technology sensors are used in smart automotive seats in cars and trucks to sense passengers and control air bag deployment. Read this link: PPS’s patented TactArray sensor technology. The software is what makes things happen.
