Could not find how the capacity of a varicap (or any diode for the case) is obtained.

Is it actually measured? I do not see how you could (?)

Or are they used in a VFO and their capacity calculated?

AFAIK the capacitance is a function of the bias voltage. The datasheet should have a range specified.

Varicap diodes are operated with reverse bias and thus takes nearly no current .

The following circuit will measure its capacitance against reverse DC voltage, using a common capacitance meter.
