I have a single single transformer that has 2 sets of inputs and 2 sets of outputs.
The input connectors/leads are labeled respectively as follows. 0---117v 0---117V.
The output connectors are labeled respectively as follows.
    0---6v3 0---6v3. Both at 2.5 amps.

Is there anyway to wire this transformer so that I can get 12.6 volts at 5 amps output

When connecting this typical transformer for mains u shud tell us what is ur mains voltage level.

Secondly this Tx can give u 6.3VAC @ 5A or 12.6VAC @ 2.5A. There is no other way u anyone can configure this to any other isolated output

Thank you, I expected that would be the result.
