Magical, you can get an integrated A to D converter and display quite easily. A simple panel meter will work, for instance. That only lets you see the temp as it is at the present.
For doing any more processing with the current and a past temp, you have to have memory and some processor to do the comparing. That tends to imply a microcontroller.
