sigma-delta ADC vs non sigma-delta ADC

Can anyone verify if I have this right? The sigma-delta version of an ADC takes samples and outputs based on the samples while a non sigma delta version simply outputs what it reads? I am kind of confused...It is kind of like the sigma delta does a weighted average?
