Here is an article on a unit that among other things monitors REM movement. It has some interesting tidbits of information that may prove helpful in your project.

tnx sir hgmjr! based on the article, they still use the traditional electrode for the Eye movement... is there any other alternative for the electrodes used? 'coz im looking for a cheaper sensor.. and i hope it is available in our country.. i'm here in the philippines.. tnx!

Do you have any small silver coins? Silver buttons, perhaps?

Solder fine wire to them using silver solder or SN96 (lead-free) solder. Immerse the silver in chlorine bleach for a few minutes. This will cause silver chloride to form on the surface of the silver object. You'll still need some kind of conductive gel that's not hazardous to the skin, but that's a start anyway.
