Scaling voltages for ADC

Hi...

I'm somewhat new to electronics and at the moment toying around with an atmega8 and an lm335, were I would like to scale the voltage range (2V-3V) to (0V-5V) as I'm using 5V as my ADC reference. Is this possible? Any other ideas are very welcome.

I've been looking at a difference amplifier, but can't think of how to get the 2V from my 5V source.
