S- and P- accidentally swapped on Load Cell. Can my testing data be converted/recovered?

*FINAL UPDATE*
After being advised by the manufacturer (likely for liability reasons) that the data cannot be trusted and will not be linear, I decided to run a calibration on the load cell with the same incorrect wiring configuration.

The calibration data turned out perfectly linear and repeatable with a scale factor of 2.16 (close to the original guess of 2.0).
The original data was fully salvaged and the student was able to complete her thesis on time.

side note: does anyone know where 0.16 came from? Is this an example of ideal vs real-world error?
