Pretty sure its half the Peak to Peak voltage for Center tapped.

what about the peak inverse voltage, why do we use a bridge rectifier instead of the centre tapped one

A bridge rectifier will work with any transformer, center-tapped or not. Example: a 12Vrms center tapped secondary will serve to supply either 17Vpk or 8.5Vpk, or two each 8.5Vpk using two bridge rectifiers using a bridge rectifier. The same transformer will supply only 8.5Vpk using a two-diode full wave rectifier.
