need help to start my embedded systems project

I am final year computer engineering student.i have taken automated cricket pitch report generation as last year project.i need following components

hardness sensor to measure pitch hardness
temperature and humidity sensor
a monochrome camera to capture pitch images

please help me in choosing right components.

also suggest a suitable development board which can accomodate all these sensors.

i want to take sensor values from micro-controller also the images to the computer so also suggest way of interfacing and once it reaches the computer my work is so easy.
