I'm looking for a good solution how to use the Raspberry Pi for acquisition of voltages and temperatures. Does anyone know IO Components that can be used with the Raspberry Pi and also with a PC running Windows?

You need an external ADC board. There are USB, I2c and SPI versions for the RPi on the market. For the PC there are USB and PCI(e) boards also.
