I have a project to include GPS and various sensors (pressure, acceleration, sound).

What will be the considerations for a platform like mbed, PIC, Arduino, or any others?

    Thank you in advance.

Pretty much any platform you select will have more than enough capability to handle basic communications and peripheral devices with basic interfaces. That being the case I would look at the software and other development tools. Are they intuitive and easy to use? Can I rapidly prototype my application?

I would also flesh out the requirements and definition of what you hope to accomplish for the single reason that it important to define what "done" means.

Depending on where it's going to be you might want to physically test them with messy power supply,
over voltage, over heating, and overclocking.

You could get GPS and various sensors up and running on an arduino pretty fast.
