How do I calculate viewed adjusting charge between two parallel metal plates?

You are not telling us very much here. Gauss's law is to do with electromagnetism. If this is two parallel metal plates I guess this is a capacitor.
Charge is stored in the dielectric (the insulator between the plates). Can be air or even a vacuum.
