The use of differential signal transmission and amplification (ref RS485) will reject common mode noise, such as mains hum and allow very small electrical signals to be sent and displayed without the need of shielding or other external filtering.

They are capturing brain waves - I suspect at frequencies near Mains transmission frequencies with dozens of electrodes on a single "test subject". Using good reference points on the Test Subject will allow differential signals to be picked up, and amplified with differential (InAmp). Keep wire lengths similar and twisted (to a reference or Ground) then use a nulling pot at the InAmp to cancel Common Mode (Mains) interference.
