Any suggestions? I am just learning about current sense mosfets and drivers. I am driving DC brushed motors used to turn plates. The plates can sometimes instantly bind and stall the motor. I need to get some protection circuitry going in my design.

Certainly current sense MOSFETs can be used with their sense outputs generating a small voltage proportional to the current. The work comes in deciding how to use that voltage to limit the current. The design of that somewhat depends upon the configuration of the drive circuits.

See attached schematic. I am using a comparator's output for the enable pin on my driver. If current is high, enable pin is low and driver will shutoff. Is this a good approach?

If the comparator operates reasonably fast to cut off the drive, then that should work.
