Hello - I am trying to connect a Nunchuck I2C connector to a Devantech USB-I2C interface. The Nunchuck is calling for 3.5V but the I2C source Voltage is 5V. Can I use a resistor in parallel to lower the voltage from 5->3.5??

This is a software guy forced to tinker with hardware and it has been 20years since I have used Ohms law :)

Wouldn't want to do that in parallel, but two simple rectifiers in series will pull around 1.2V off of the 5V.

You want voltage divider, that is resistors in series.
