What's different about a potentiometer with a center detent?

Other than the detent, there is no other difference that I can imagine.

The detent is implemented as a seperate mechanical function while the resistive element is unchanged.

Do you mean a balance control/fader? Like in a radio/stereo?

Usually those are dual/ganged pots that
    1. have the detent in the center of movement
    2. are wired so as one increases the resistance the other one decreases its resistance
