So... How exactly is the AC for say.. a radio antenna signal produced?

 

With an Oscillator. Crystal based for radio stations. See the Vol II - AC section of the e-book at the top of the screen.

I understand how a radio signal is interpreted, but I do not understand how the ultra-high frequency is produced and transmitted

 

With a 'cavity'. It is a physical construct that has an equivalent electrically in the LC tuned tank.

If you believe you are ready(have a slide rule and algrebra reference book at hand) then look up 'Wave guide theory'. By understanding the transmission of RF in a waveguide you will gain understanding of how the amplifiers for RF signals are constructed and why.
