I think a better description of your needs will help. Is this an 8x8 digital multiplier, an 8 bit x analog multiplier, or an analog multiplier capable of 8 bit accuracy? Or something else?

The easiest way to make an 8 x 8 digital multiplier is with two 64K ROMS each having an 8 bit output. The 16 address lines are the inputs and the 16 data lines (8 on each chip) are the outputs. Piece 'o cake.
