Most ordinary opamps have an input offset voltage where the inputs do not perfectly match which causes the output to go positive or negative when its inputs have the same voltage. The offset adjustment trimpot allows the input offset voltage to be nulled.

The datasheet for the opamp lists typical and maximum input offset voltage and shows the recommended value for the offset adjustment trimpot and how to connect it.
The 741 opamp is 43 years old and has poor performance. Newer and better opamps have the input offset voltage trimmed to almost nothing at the factory.
