If you are thinking sensors on of the popular methods uses ping pongs, where a light is shined through a simple acrylic tube with a photosensor of some kind on the other side of the tube. If the ping pong interrupts the light beam you know where the water level is. Usually used for sensing low and high levels in a tank.

Then there are level sensors that use probes at that penetrate the tank at different levels with LEDs that show which probes are under water. There have been several posts on level sensing here in AAC, mostly using 4066's.

The magazine "Everyday and Practical Electronics" recently did a water level project based on air pressure in a pipe using a normal air pressure sensor.

I'm think of building one of these myself.

You can put the led in the tank at the area where you want the indication to be.

When the LED goes out, you know the water got there. ;)
